Start with How the Meat Is Cooked
Before you pick an entree, it helps to understand how we cook. Many of our most popular wedding dishes are prepared over charcoal using custom-built roasters. The Strock family started with one custom-built roaster in 1983 and now operates approximately 15 roasters. Charcoal cooking is slower, and that patience shows up in the finished dish in a way a gas line or warming pan simply cannot replicate.

What Every Catering Package Covers
Every wedding catering package includes full buffet service, non-alcoholic beverages, appetizers, rolls with dinner, and formal tableware with linen-look napkins. Our team sets up, maintains, and tears down the buffet. Tables are bused, and leftovers are packaged before we leave. Chips, pretzels, and ranch dip come out during the appetizer period, and cupcakes or dark chocolate mousse are available for dessert.
You are welcome to bring your own cake. We will cut and serve it. Menu customization is part of the process, not an add-on. Menu changes can be made up to 14 days before your event. Outside catering vendors are not permitted, although homemade food is welcome.

The intimate wedding package here includes a sweetheart table and six round tables. For receptions with a larger guest list and an open-air preference, the Turkey Pen seats 250 or more banquet style, with ceiling fans, ambient lighting, and on-site electricity.
